The St. Regis Café is a student- and faculty-operated training restaurant, where second-year students majoring in culinary arts and first-year students entering the hospitality management program receive training in restaurant service. With an emphasis on classic culinary techniques and American service, our menus and cooking techniques are designed to reinforce and assess the student’s fundamental skills developed during the first two semesters at Paul Smith’s College. Menu development is focused upon sustainability and local products.
